Description
The much adored Noah’s Mill bourbon here, made with a mash bill of 72% corn, 13% rye, and 15% barley. This expression is bottled at a very generous 57.2% ABV – a drop of water does help bring some of the rich fruity notes to the fore, while it’s earthy, resinous depth ought to shine in an Old Fashioned. On the nose, heavy treacle and vanilla, dusted with plenty of cinnamon. Notes of forest floor and earthy oak nestle beneath. In the mouth, ginger, black pepper, honey-drizzled sponge cake and cooked pear, with resinous oak and subtle hints of dried herbs. Honey-roasted nuts on the finish, sharp green apple, another kick of pepper, and a touch of damp earth.
