Description
The Serra Mãe is made from 100% Castelão, grown on the free-draining, sandy soils East of Palmela. It was naturally fermented (no added yeast), and then subsequently aged, in concrete vats.
We had the opportunity to bottle our own interpretation of this grape, and we selected this wine because we think it displays a pure sense of variety and place.
The wine shows cherry and bramble fruits, some green herbs, and a fresh and juicy texture. Its fresh acidity is a perfect match for slow-roast lamb or toad in the hole.
